Ross Henery Professional began in 2008 with one chef's knife, one grinding wheel, and a stubborn belief that a working knife shouldn't cost a week's wages. Seventeen years later we're still a small team, still in the UK, and still checking every set before it goes in the box.
We source X50 CrMoV 15 forged steel, harden it to 56–58 HRC and finish each blade to a 15° edge per side. Handles are triple-riveted and the tang runs the full length — the parts you can't see are the parts that decide whether a knife lasts a decade.

X50 CrMoV 15 is drop-forged, then heat-treated to 56–58 HRC — hard enough to hold an edge, soft enough to take one back on a stone.
Blades are ground to 15° per side and each knife is balanced by hand at the bolster, so the weight sits where your grip wants it.
Knives are seated in a solid oak, bamboo or magnetic block, then every set is inspected, boxed with its care guide and shipped from the UK.
The Eclipse set is the real deal. Full tang, comfortable in the hand, and sharp as anything I've paid three times the price for. Block looks lovely on the worktop too.
We use the Japanese-style set in service. Takes a brilliant edge back on the stone, and the santoku is a workhorse. Happy to recommend it to other kitchens.
